📝 Abstract

The objectives of this study were to study of drying kinetic, thermo-physical (effective moisture diffusivity and surface convective mass transfer coefficient) and quality properties (shrinkage and bulk density) of potato slices drying in a convective hot air dryer. Also In order to simulate the drying process a three-dimensional finite element model was applied and a program was developed in Copmaq Visual FORTRAN version 6.5. Potato slices were dried at different drying air temperatures and a constant drying air velocity. The thermo-physical and the quality properties of the samples were determined experimentally. Mass transfer coefficient was presented by a function of polynomial order 2. Experimental data of shrinkage and bulk density were fitted to some empirical models. All proposed and suggested empirical model were accurate in prediction. The finite element model and the solution were proved to be able to predict the variation of the average moisture content during drying process with a good accuracy according to RMS (%) values.
